With summer just around the corner, we know that everyone wants to start getting out and about. Whether you’re planning on going out on a country hike, venturing to the beach with the girls or even just into your own back garden, taking a basket of delicious food is always a good idea. So, we’ve got some scrumptious picnic ideas for you. All you need to do is get the food together and get out there. Don’t forget the picnic blanket!
Sandwiches are the obvious choice for a picnic. Whether you’re a crusty roll or a tiger loaf fan, we’d recommend pressed ciabatta sandwiches – delicious and ideal for carrying outside with you. If you wrap them tightly in greaseproof paper the night before, the flavours will melt together to create the perfect taste.
Cooked ham, gorgonzola cheese and pesto are an amazing trio. Chorizo with rocket, plum tomatoes and chickpeas is an equally divine choice. However, if you prefer more traditional sandwiches then classics like cheese ploughman’s, tuna and cucumber and chicken and bacon are sure to be super tasty too!
Sausage rolls and cheese pies are great pastries to take out with you. We cheat and buy them ready made from M&S, but making sausage rolls is actually a lot easier than it would seem, especially if you use ready to roll puff pastry – then the only thing to do is to strip the sausages of their skin and put them together in the roll of deliciousness. See the Keef Cooks blog post for a step-by-step guide to making your own sausage rolls. [http://www.keefcooks.com/how-to-make-sausage-rolls/]

If you’re looking for a healthy option or just love a nice, fresh salad we recommend tasty veggie pasta or a chicken salad. Veggie pasta usually consists of grilled vegetables, chunky pasta, tangy tomato sauce and a coating of grated cheese. Choose your fave cheese to sprinkle on top and any vegetables that you like will be yummy. For the chicken salad we’d recommend spinach leaves, tomatoes, cucumber and crumbled goats cheese. But feel free to improvise!
Now onto the best part – dessert. Mini brownies and cupcakes are the perfect sweet treat for the end of the picnic. Whether they’re homemade or shop bought, we know they’ll be a great picnic accompaniment. Fruit is also a delicious picnic snack. You can take it whole, sliced up in a plastic container or you can make fruit skewers with kebab sticks. Whatever you choose, the healthy but deliciously sweet treat will taste even better outdoors – we can guarantee it. A super delicious, classy nibble for a picnic is chocolate covered strawberries. Simply melt a block of chocolate, dip your strawberries in and then leave them to cool.

If you’d prefer to keep things simple then you can just take a box of chocolates or a packet of cookies – all food tastes better outdoors. Especially chocolate!
Finally, the most important picnic essential – Lambrini! As we all know, a bottle of Lambrini is the perfect accompaniment to any picnic. We recommend So Strawberry or Truly Peach to bring the fruity and sweet taste to your picnic.
Now all there’s left to do is to get your food of choice together in a basket and start out on your picnic adventure. Don’t let the summer go to waste – have a picnic in the sun and truly make the most of it!
