lNGREDIENTS

75ml Lambrini Always Original

15ml Passoa

20ml Vanilla vodka

15ml Pineapple juice

15ml Passion fruit purée

Vanilla/cinnamon foam:

4 egg whites or 100ml pasteurised egg white

25ml lemon juice

50ml vanilla gomme

METHOD

Make the foam by pouring the eggs into a creamer or whip and gas. Alternatively, blend with a stick blender until you reach the desired fluffiness.

Shake all ingredients over ice apart from the foam. Pour into a flute style glass. Top with vanilla cinnamon foam.
