BBQ season is in full swing and there’s nothing better than getting your friends round for a bite to eat in the garden. To make sure you’re the hostess with the mostess, here are five quick and easy BBQ recipes that Nigella herself would be proud of… now all you need to do is #BringTheBrini!
Minty BBQ Lamb
2 tbsp olive oil
2 garlic cloves, finely chopped
1 tbsp balsamic vinegar
20g mint leaves, chopped
4 lamb leg steaks
Salt & pepper
Whisk the oil, garlic, balsamic vinegar and mint together and season with salt and pepper, then pour into a dish. Add the lamb and coat it in the marinade. Cover and leave for up to 1 hour, then remove the lamb and lay on the BBQ. Cook for 3-4 minutes on each side until cooked through.
800g small new potatoes
3 shallots, finely chopped
3 tbsp mayonnaise
3 tbsp extra virgin olive oil
Small handful parsley leaves, chopped
Cut the potatoes into chunks and boil in salty water for 20 minutes until just cooked, then drain and leave to cool. Mix in a bowl with the shallots. Add the mayonnaise then stir in the olive oil and vinegar. Finally, sprinkle in the parsley, mix together and serve.
Sticky Chicken Drumsticks
8 chicken drumsticks
2 tbsp soy sauce
1 tbsp honey
1 tbsp olive oil
1 tsp tomato purée
1 tbsp Dijon mustard
Make three slashes on each drumstick. Mix together the soy, honey, oil, tomato purée and mustard, then pour over the chicken and coat thoroughly. Leave to marinate for 30 minutes at room temperature or overnight in the fridge.
Place the drumsticks on the BBQ and cook, turning occasionally until the chicken is tender and cooked through
1kg minced beef
140g mature cheddar, grated
4 tbsp Worcestershire sauce
1 small bunch parsley, finely chopped
2 eggs, beaten
Salt & pepper
Crumble the mince into a large bowl and tip in the breadcrumbs, cheese, Worcestershire sauce, parsley and eggs with 1 tsp ground pepper and a pinch of salt. Mix with your hands until everything is combined.
Shape into 12 burgers and chill until ready to cook. Pop on the BBQ and grill for 6-8 minutes on each side until cooked through.
Enough bananas for each guest
4 Milk chocolate squares per banana
Peel the bananas and slice them lengthways down the middle without going right through to create a long ‘pocket’. Stuff the pocket with squares of Milk chocolate, then wrap in tinfoil.
Grill on the BBQ for 20 minutes or until the banana is soft and the chocolate has melted.
