2. BBQ it up
Is there anything more classic than a Bank Holiday BBQ? Fire up the grill and cook some tasty treats for your friends – we love this quick and easy lamb kebab recipe… and if the weather’s a bit off, just take it inside and use the oven instead!
- Freshly ground black pepper
- Sea salt
- 1 teaspoon dried oregano
- Olive oil
- 4 lamb steaks, cut into 3cm chunks
- 2 red peppers, deseeded and cut into chunks
- 8 fresh bay leaves
- 2 lemons, cut into wedges
- 2 garlic cloves, peeled
- a few sprigs of fresh parsley, leaves picked and chopped
- 1 cucumber, sliced
- 1 tablespoon Greek yoghurt
Crush the garlic and a generous pinch of salt in a bowl, add the dried oregano and a splash of oil then season with salt and pepper. Pop the lamb in a large bowl, add the marinade and toss to coat. Keeping everything roughly the same size, slide each ingredient onto a skewer without pushing too closely together, alternating between lamb, pepper, bay leaves and lemon wedges. Lay the skewers on the grill and cook for 10-15 minutes, turning occasionally until charred, sticky and cooked through. Serve scattered with chopped parsley, a dollop of Greek yogurt and some sliced cucumber.
Those Rosemary Lamb Kebabs were amazing with homemade tzatziki, tabouleh and spicy harissa hummus… It takes a little planning and time, but it’s easy and so worth it. I used @InaGarten’s 24-48hr yogurt rosemary marinade with pasture raised lamb from @buyranchdirect. And… Ina’s delicious Tzatziki recipe. I might’ve found a new fridge staple, it was that good. 3. Turn getting ready into an art form
Remember the good old days, when you spent hours and hours getting ready for a big night out? Use your Bank Holiday to make party prep an Olympic sport – invite the girls round, get the Brini on ice and spend all day primping and preening. Search Pinterest for hair inspo, try a new nail colour, turn the tunes UP and start the celebrations early!
4. Make a bowl of Brini Punch
Light, fruity and refreshing – a bowl of Brini punch is just the ticket for a Bank Holiday celebration… and it makes refills super easy!
Pour 100ml of apple juice and 100ml of cranberry juice into a punch bowl. Add 10 raspberries, 2 chopped apples and 2 chopped limes, then top up with half a bottle of Lambrini Always Original and half a bottle of Lambrini So Strawberry. Garnish with slices of apple and more fresh raspberries.
5. Play some Brini board games
When it comes to British Bank Holidays, there’s always a chance the weather will let us down. But don’t let a bit of rain spoil your plans – just make sure you have a backup! If you and your besties are stuck inside, dig out the retro games and host a Brini board games championship.
We’re thinking Twister, Guess Who? and Mouse Trap… get the Brini on ice, order a few pizzas and let the games begin!
